And here it is – the third meal for the change it up challenge. Despite the fact that three seems like such a small number, it was actually pretty challenging to come up with three new meals this week!
I am so accustomed to making effortless meals that I kind of forgot what it’s like to put a little thought into dinners. But you know what? It’s so darn satisfying to make yourself a delicious new meal. Double points when that meal is healthy AND still easy.
The first – veggie stir fry with soba noodles and teriyaki tofu. This was my favorite dinner of the entire week and despite the fact that I’m changing things up, this will be a frequent meal in my house.
The second – totally random chilled cucumber soup and roasted kohlrabi. So while the soup was pretty tasty, I’m definitely going to save this recipe for the summer months. Chilled soup and 10 inches of snow don’t mesh very well.
The kohlrabi, on the other hand, can definitely stay. I still have two of those suckers left and I have already have plans for them. Plans that involve my steamer, lemon juice, salt, and pepper. Yum.
The third new meal of the week? Savory socca with kale, laughing cow cheese, cranberry apple butter, and a fried egg.
This meal was actually created out of another attempt to use up the pulp from my juicer. This time, my juice pulp recipe was a success! I can’t get over how versatile (and easy) garbanzo bean flour is.
For the socca:
- 1/3 C. garbanzo bean flour
- 1/3 C. warm water
- 1 T. nutritional yeast
- 1 T. Bragg’s Organic Sprinkle
- salt and pepper
Put the flour and spices into a large bowl, then add the water and whisk. Once the dry ingredients and the water are well-mixed, fold in the juice pulp (chopped veggies would work just as well).
Cook it just like a pancake in a warm pan spritzed with olive oil. Flip once.
Top it with whatever your heart desires and enjoy!
I chose laughing cow cheese, cranberry apple butter, and an egg because I’m obsessed with sweet and savory combinations.
This would also be delicious with hummus, goat cheese, scrambled eggs, a little butter and jelly, etc..
