Single Serve LOVE Grown Granola Oatcake

Breakfast. It’s one of the main reasons that I love weekend mornings. And when I say mornings, I may actually mean nearly noon because we all know that I’m not always a morning person.

There are also a ton of other reasons why I love the weekends – no work, no alarm, family time, freedom – but for the purpose of this post, let’s just say it’s all about the breakfast.

During the week, breakfasts are grab and go. Coffee is sipped (okay, chugged) from a to-go mug. And the general mood is rush, rush, rush.

Now on the weekends, everything is reversed. I can put some time (and thought) into breakfast and it’s actually served on a plate rather than eaten in the car. Coffee is sipped (okay, still chugged – who am I kidding?) from a nice big mug. And most importantly, the mood is relaxed. Oh weekends, I love you so.

This past Saturday, I started to prep my usual weekend breakfast – scrambled eggs with veggies and toast – and then I thought, wait a minute here. I’m supposed to be challenging myself to change up my meal routine. You know, trying meals that are different and possibly new.

So what better time to try something new than on the weekends when time is aplenty?

It’s not that my old favorite isn’t delicious. Because it is. In fact, I had it on Sunday.

But this meal:

definitely gives my favorite breakfast a run for its money.

It all started with this LOVE Grown Granola.

As a Love Grown blogger, I definitely enjoy my fair share of delicious granola. In fact, I have a handful (or five) pretty much every single day.

But for some reason, this particular bag was left unopened. Not because it’s not tasty (it is) – but when I’m grabbing handfuls, I go for the chunkier versions. The flavors with plenty of cranberries, coconut, and chocolate. Cocoa goodness and sweet cranberry pecan are my absolute favorites.

So how could I use this bag of simply oats? Why for an oatcake of course. An oatcake that keeps you full and is totally delicious to boot.

Single Serve LOVE Grown Granola Oatcake

  • 1 serving (1/4 C.) Love Grown Simply Oats
  • 2 T. old-fashioned rolled oats
  • 1/4 C. egg whites
  • 2 t. cinnamon
  • 4 drops liquid vanilla NuNaturals stevia (or sweetener of choice)
  • 1/4 C. fresh blueberries
  1. Finely blend the Love Grown granola, rolled oats, and cinnamon in a food processor, blender, or magic bullet.
  2. Mix together the egg whites and liquid sweetener. Then add in the blended granola. Mix well.

  3. Finally, fold in the blueberries.

  4. Cook in a warmed pan spritzed with non-stick spray, flipping once.

   5. Top with Chobani Greek yogurt sauce (see below) and sliced bananas.

  • 1/3 C. plain Greek yogurt
  • 1-2 T. vanilla almond milk (to thin it out)
  • stevia + cinnamon to taste

This was so freaking good. And although it was only one oatcake – it kept me full for a few hours! I can’t say the same thing about regular pancakes.

My favorite part? These are so versatile. They can be made with any of Love Grown’s fabulous flavors of granola. Additionally, you could use any type of fruit – raspberries, strawberries, peaches, etc..

And of course, you can get creative with the toppings too! Syrup, protein fluff, or almond butter would all be delicious.

Now that’s what I call spreading the LOVE. Thanks to the amazing people over at Love Grown for making this weekend breakfast possible.
