Yesterday was a great day. In fact, the entire weekend was pretty fun.
On Friday, my brother, Dad, and I headed to Chicago. After a doctor’s visit, we found ourselves at Piece Pizzeria. We’ve been here before and it is always delicious.
Plus, I kind of love the fact that it’s right across the street from another favorite – Forever Yogurt. Pizza and frozen yogurt? Yep, count me in.
By the time we reached Piece, we were more than ready for some food. Naturally, we ordered two appetizers to split between the three of us – guacamole and chips and goat cheese marinara.
I’m not even joking when I say I could eat that goat cheese with a spoon. Okay, you caught me – we ran out of bread and I did finish that bowl off with a spoon. It’s that good.
As per usual, I stuffed myself with appetizers [anyone else do this?] – so I only had room for two pieces of pizza. Since we couldn’t decide on toppings, we went with a half-and-half.
One half had roasted red peppers, spinach, and goat cheese and the other half had banana peppers, onion, and goat cheese. I tried one of each. My brother and I chose the roasted red pepper and spinach half and my dad chose the banana peppers and onions.
Of course, my dads topping choices turned out to be a family favorite. I guess I’ll let you claim the “I told you so” this time Dad!
No matter how full I am, I always have room for frozen yogurt. It’s kind of a problem, but who can resist caramel, red velvet, and cake batter frozen yogurt? Not me. That’s for sure. I think I may need to bust out my ice cream maker and recreate some of these flavors.
Excited much?
Saturday was a pretty chill day. We hung out at home all day and then my brother and his girlfriend, Camille, came over for stir fry at night.
Tristan had been raving about my baked teriyaki tofu and Camille wanted to give it a go. Needless to say, she didn’t like it. When it comes to tofu - you win some, you lose some.
And regrettably, the weekend came to an end on Sunday. The day started out as everyday does – with coffee. Two cups of Starbucks Dark Roast woke me up quite nicely.
After some cleaning and organizing around the house, I headed to Costco to replenish my produce. Spinach, cherry tomatoes, frozen broccoli, mini sweet peppers, sugar snap peas, bananas, cuties, blueberries, and apples all found their way into my cart.
Have I mentioned that we are a family of three? Yeah, it’s going to be a veggie and fruit-filled couple of weeks. Just the way I like it.
Finally, I headed to Zumba!
It’s been far too long since I’ve taken a Zumba class, but it was just as awesome as I remembered. High intensity, amazing songs, and tough [but fun] choreography. Remind me not to take such long breaks in between Zumba classes, okay?
So, after my nice and sweaty workout, I headed to my parents house for the super bowl. It was there that I proceeded to eat even more pizza [banana pepper, onion, and pineapple – yum], cookies [the soft ones with frosting – yum again], and loads of chips and hummus. So I may have cancelled out my workout [and then some] – but hey, a healthy lifestyle is all about balance.
And let’s be honest – I only went to my parents for the food and family time. I could really care less about the super bowl. Sorry I’m not sorry.
So even though I had a pizza-filled weekend, I’ll approach today as any other day. I’m starting off the day with Greek yogurt, berries, and a banana and I already have plans to meet my brother and Dad for a lunchtime workout. See? A healthy lifestyle can be easy as long as you don’t let any self-sabotaging behaviors get in the way.
Truth.
Tell me about your weekend – any fun super bowl parties or maybe some fun super bowl eats?
<3 Stefanie
