a day of convenience foods

Well, hello March. I can’t believe we’re already in the third month of 2012! If life could put the brakes on for a while, that’d be fab.

Random fact? It’s now been two months since I last had soda. At first, I seriously missed my beloved Diet Dr. Pepper Cherry. As each day passes, I crave it less and less.

The whole no soda thing started as a little bet between my sister and I. Honestly, we had no idea how long it would last. Since we are both equally stubborn, I’m thinking it may be a while before Diet Dr. Pepper and I reunite.

So as much as I try to avoid convenience foods (soda included), sometimes it’s just inevitable. Especially during those times when the situation calls for something quick and easy.

After being sick for two days (Adam and I both), I was seriously lacking in energy last night. Actually, I’ve had little to no energy all week. It happens.

I didn’t even pack my lunch on Tuesday night, which is exactly why I headed to Panera for a midday meal.

If you know me, then you know that I pretty much always pack a lunch. But on those days that I don’t, Panera is my go-to for a tasty meal that includes some greens.

I’m a creature of habit, so my order is always the same—Fuji apple salad (minus the chicken), soup, and a whole grain baguette. The black bean soup is my absolute favorite, but the pesto garden vegetable comes in at a close second.

So after working, catching up on life (chores, emails, laundry), and sweating it out at the gym – I was all out of what little energy I had.

Yep, that equals an easy, throw-it-in the oven meal.

Just like I chose a healthier lunch restaurant, I also chose what I consider to be among the best of the convenience foods.

Of course, I added in some extra greens and peppers, which took the pizza from this -

Not too shabby, eh?

To be honest, the pizza is pretty great on it’s own. But I had some spinach and peppers, so I figured why not?

And because I have problems – I also added a small side salad.

It was just some mixed greens, tomato, and balsamic vinegar. Simple and tasty.

I ended up having a third slice of pizza (the Kashi is seriously good and therefore irresistible) and I actually felt as if I had a decent well-rounded meal.
