Obesity involves changes in the function of brain regions that regulate body fatness and blood glucose, particularly a region called the hypothalamus. My colleagues and I previously showed that obesity is associated with inflammation and injury of the hypothalamus in rodent models, and we also presented preliminary evidence that the same might be true in humans. In our latest paper, we confirm this association, and show that hypothalamic injury is also associated with a marker of insulin resistance, independently of BMI.
The question is, why is there so much craze for the watermelon? At first glance, it may seem like nothing more than a big ball of water. We all know that there is nothing more refreshing than a big, chilled wedge of watermelon on a hot, summer day and it does sport a stylish scientific name of Citrullus Lanatus, but what’s the real reason so many people flock to grocery stores every summer to buy a big, awkward fruit like this one? Well, it is hard to narrow it down to a single reason; there are actually a lot of them. Watermelon is now the most-consumed melon in the US (followed by cantaloupe and honeydew). This cousin to cucumbers, pumpkins, and squash is thought to have originated in Egypt close to 5,000 years ago, where it is depicted in hieroglyphics. As for accessing the total medicinal benefits of watermelons, it is highly dependent on the variety of watermelon and the ripeness. Beta carotene and lycopene is usually bio-available in the highest quantities once the watermelon is completely ripe, and don’t be afraid to eat some of the watermelon rind; there are quite a few nutrients in there as well, particularly the roughage and fiber.

1. Watermelon Has More Lycopene Than Raw Tomatoes
Lycopene is a powerful carotenoid antioxidant that gives fruits and vegetables a pink or red color. It's most often associated with tomatoes, but watermelon is actually a more concentrated source. Compared to a large fresh tomato, one cup of watermelon has 1.5 times the lycopene (6 milligrams (mg) in watermelon compared to 4 mg in a tomato).
2. Watermelon Juice May Relieve Muscle Soreness
If you have a juicer, try juicing about one-third of a fresh watermelon and drinking its juice prior to your next workout. This contains a little over one gram of l-citrulline, an amino acid that seems to protect against muscle pain. One study found that men who drank natural unpasteurized watermelon juice prior to their workouts had reduced muscle soreness 24 hours later compared to those who drank a placebo. You do need to be careful with drinking watermelon juice, though, as it contains a significant amount of fructose. It may be better to eat the entire fruit, or opt for these other tips to prevent muscle soreness.

Most people throw away the watermelon rind, but try putting it in a blender with some lime for a healthy, refreshing treat. Not only does the rind contain plenty of health-promoting and blood-building chlorophyll, but the rind actually contains more of the amino acid citrulline than the pink flesh. Citrulline is converted to arginine in your kidneys, and not only is this amino acid important for heart health and maintaining your immune system, but it has been researched to have potential therapeutic value in over 100 health conditions. How to Pick the Perfect Watermelon
Cutting into a watermelon and finding out it lacks flavor is disappointing. There's a trick you can use to pick out a ripe watermelon, either from your farmer's market or your own melon patch. Look for a pale, buttery-yellow spot (not white or green) on the bottom. This is where the watermelon sits on the ground ripening, and it's one of the best indicators of ripeness you can use (even commercial watermelon pickers use this as a gauge). Other tricks for picking a ripe watermelon include:
Should be heavy for its size
Smooth rind with a dull top (the top is the side opposite the ground spot)
The thump test (this is controversial, but ripe watermelon is said to have a hollow bass sound)
Store your watermelon in a cool area (50-60 degrees F) until it's cut. Cut watermelon should be refrigerated (and be sure to wipe off your watermelon with a damp cloth prior to cutting it). Remember, try the rind blended with some lime juice rather than simply tossing it in the trash (choose an organic watermelon especially if you'll be eating the rind). Finally, watermelon should be enjoyed in moderation due to its fructose content. One-sixteenth of a medium watermelon contains 11.3 grams of fructose (it's recommended keeping your total fructose intake below 25 grams of fructose per day if you're in good health, and below 15 grams a day if you're overweight or have high blood pressure or diabetes).
In the last post, I reviewed a study by Gerald Reaven's group showing that insulin resistance strongly predicts the risk of cardiovascular disease over a 5-year period. In 2001, Reaven's group published an even more striking follow-up result from the same cohort (1). This study shows that not only does insulin resistance predict cardiovascular disease risk, it also predicts a variety of age-related diseases, including hypertension, coronary heart disease, stroke, cancer, type 2 diabetes, and even overall mortality risk.
In this post, I'll examine the possible relationship between meat intake and type 2 diabetes. Type 2 diabetes is the most common form of diabetes, and it is strongly linked to lifestyle factors.
Non-industrial cultures
Non-industrial cultures have an extremely low prevalence of diabetes, whether they are near-vegan or near-carnivorous. This is supported by blood glucose measurements in a variety of cultures, from the sweet potato farmers of the New Guinea highlands to the arctic Inuit hunters. A new study adds to the evidence that the prevalence of type 2 diabetes is rapidly increasing in the US, and our national weight problem is largely to blame.
The Centers for Disease Control (CDC) currently estimates that a jaw-dropping 33 percent of US men, and 39 percent of US women, will develop diabetes at some point in their lives (1). Roughly one out of three people in this country will develop diabetes, and those who don't manage it effectively will suffer debilitating health consequences. Has the risk of developing diabetes always been so high, and if not, why is it increasing?
In the same issue of the Annals of Internal Medicine as the low-carb vs. low-fat study, appears another study that aims to partially address this question (2).

If you’re going to munch on chocolate, choose dark chocolate. It’s something that has gained popularity as growing research points out the various health benefits of eating dark chocolate in moderation.
Antioxidants and flavonoidsmake it so good Studies have shown that dark chocolate, which is rich in flavanols — a type of healthy antioxidant — can improve your cardiovascular system. Chocolate is also filled with other types of antioxidants and flavonoids, the latter of which are found in various fruits and vegetables. Flavanols are the main type of flavonoid in cocoa, and have been shown to improve vascular health by lowering blood pressure, improving blood flow to the brain and heart, as well as boosting the clotting properties of blood platelets. Not all chocolate is created equal In fact, that strong bitter taste in really dark chocolate comes from flavanols. That’s why processed chocolate — which goes through plenty of steps to reduce that bitter taste — is sweeter and contains far less flavanols than pure cocoa.
How dark chocolate can help in weight loss? Andrew P Neilson of the Department of Food Science and Technology at Virginia Polytechnic Institute and State University led a mouse study where the researchers placed lab mice on a high fat diet rich in flavanols. Lab mice were divided into various groups and given specific diets over a limited period of time. According to a result published in American Chemical Society’s “Journal of Agriculture and Food Chemistry”, it was demonstrated that flavanols known as Oligomeric Procyanidins (PCs) seemed to have a protective effect on health. Mice consuming a diet rich in PCs were able to maintain their weight and blood sugar low, even when the overall substance of their diet was high in fat.
Oligomeric PCs appear to own the greatest antiobesity and antidiabetic bioactivities of the flavanols in cocoa. It promotes heart health, lowers blood sugar, and decreases body fat.
Oligomeric PCs helped in regulating blood glucose levels and hence, prove useful in treating diabetes. In the study, the mice eating a OPCs rich diet had the lowest fat mass and lower body weight at the conclusion of the study. Besides, they were least likely to develop impaired glucose tolerance and insulin resistance, all of this despite eating a high fatty diet.
Bottom line “Oligomeric PCs appear to possess the greatest antiobesity and antidiabetic bioactivities of the flavanols in cocoa, particularly at the low doses employed for the present study,” the researchers state. So before reaching for that bag of processed candy chocolate on the shelf, choose dark chocolate — the higher percentage of dark chocolate, the better.

Chocolate & berry mousse pots

Ingredients
75g dark chocolate 70% grated
4 tbsp low-fat yogurt
2 large egg whites
2 tsp caster sugar
350g berries (try blueberries, raspberries, cherries or a mix)
Directions Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn’t directly touch the water. Once melted, allow it to cool for 5-10 mins, then stir in the yogurt.
Whisk the egg whites until stiff, then whisk in the sugar and beat until stiff again. Fold the whites into the chocolate mix – loosen the mixture first with a spoonful of egg white, then carefully fold in the rest, keeping as much air as possible. Put berries into small glasses or ramekins, then divide mousse on top. Chill in the fridge until set.

25g white chocolate
50g dark chocolate, chopped
2 large egg whites
1 tbsp caster sugar
generous pinch ground cardamom
Directions Make chocolate curls with the white chocolate by running a swivel peeler over the surface. When you have enough to sprinkle over 4 chocolate pots, set these aside, then chop the remainder.
Melt the dark chocolate in a bowl over simmering water or in the microwave on Medium for 1½-2 mins. Leave to cool slightly. Whisk the egg whites until stiff, then whisk in the sugar and cardamom. Fold in the melted chocolate, then gently fold in the chopped white chocolate. Divide between 4 small dishes or cups, about 100ml in size. Sprinkle over the white chocolate curls and chill until ready to serve, at least 1 hr.
