Hey Beauties! This past week has been a complete whirlwind! It has been a blast, but I am exhausted! It's funny how a relaxing vacation can really take it out of you. I suppose it's all the traveling? I talked before about how I was worried about getting back into the “swing of things” when taking a vacation mid-semester. And this fear has proven to be slightly confirmed. I want to get back into the swing; however my lack of energy is rudely standing in my way.
I’ll tell you about my Los Cabos vacation in pictures (because that’s much more fun). It was Cabo’s “slow season” since it is their summer right now. And not to mention, it’s also hurricane season! We got really lucky and had beautiful (albeit humid) weather the entire time. But I won’t lie; the fall weather here at home feels pretty great too.
Our trip home was long and rushed! Our morning flight had us waking up at 4:00 AM! Then after running across the airport, we missed our connecting flight from Dallas to Chicago! Luckily, we were able to jump on a flight that was only about 40 minutes past our planned departure (more running ensued). Hey, at least I checked off my work out for the day. ;) The flight flew by because we were on a huge jet and we each had our own personal TV’s. Some mixed nuts, Diet Dr. Pepper, and Letters to Juliet—and we were landing in Chicago!
Friday I worked all day—which proved to be beneficial because I was able to catch up on some homework!
This morning I woke up, had breakfast, and was off to my son’s first soccer game of the season! Breakfast was quickly thrown together (hence the missing pictures):
La Tortilla ivory teff wrap, ¼ cup egg whites (microwaved in a mistoed bowl), laughing cow, nutritional yeast, and spinach—all rolled up and taken to-go. I also made myself a much-needed iced coffee, again to go.
After my son’s game, we headed to the new and shiny YMCA in another town (only about 20 minutes, so it’s worth it!). My workout was a hodgepodge of fun stuff:
Basketball
Jogged 3 miles on the track
1 mile of intervals on the track (sprint the straight-aways, walk the curves)—this was MUCH harder than simply jogging! Love it!
Bench: 3 sets of 10 flat, 3 sets of 10 incline, 3 sets of 10 decline (it hurts so good)
Finally, lunch was devoured!! (No pics again, I need to get better at bringing my camera along) We went to a cute little café, called Uptown Café. THEY HAD ALMOND MILK!! Can you tell I'm excited? Caps & Bold was necessary! So of course I had a café au lait with almond milk and sugar free vanilla syrup. Yummy.
We shared a Mediterranean platter and a roasted red pepper hummus platter to start.
For my entrée, I had a flat bread veggie pizza: caramelized onions, roasted red peppers, and goat cheese. It is usually drizzled with a balsamic reduction, but this time it wasn’t. It was still delish!!
I also snuck a few bites of my son’s birthday cake ice cream for dessert.
Now I am off to do more catch up work! I have to paint for like 8 hours straight. This class is not a class to miss.
I’m contemplating dinner as well. I’m thinking a ginorm “lettuce-less salad” because my body is craving veggies!
