Simple, healthy, delicious

Good morning everyone! Hope everyone’s Tuesday is off to a fabulous start! I know mine is, but how could it not be after breaking the fast with this beautiful baby:
It has been far too long since I have created something with goat cheese, and boy did this hit the spot!

So simple as well! You will notice that I will usually have a theme of very “simple” meals included in my days. This is because I am a super busy student and mother with a home to take care of, places to go, and people to see! ;) Plus, a lot of meals are packed and eaten on-the-go! My lunch box is a dear friend. That being said, I hope to start creating more meals, but until then simple is key! Well that's refine that to: simple, delicious, and healthy—this is actually pretty darn easy to attain! I used to think healthy eating was just too much work, but in actuality using whole foods and clean ingredients is simpler and more satisfying to boot! I see SO MANY good looking meals on blogs and I have a huge list of recipes that I want to make! Stay tuned. :) Let’s digress back to my omelet. Because it was that good

I actually made his and hers omelets. For his, I used two organic eggs, butter, and pepper jack cheese. Whereas for hers (mine), I used 1 organic egg and 1 egg white, EVOO and goat cheese. Both included mini sweet peppers and spinach sautéed in a little EVOO, as well.
I also had a Whole Wheat Arnold sandwich thin topped with strawbeezie preserves for some carbage.

So a little something off the topic of food: Does anyone else get really anxious when your house is messy/unorganized? I am kind of obsessive when it comes to keeping my house clean. But during the week, there isn’t always time to Swiffer the floors and vacuum the couches—and I find that I am irritated to be home when these things need to be done. I have a really hard time pushing these “need-to-clean” thoughts into the back of my mind in order to focus on more important things—like my son and homework!

I almost forgot to mention last night’s study buddy: green tea latte! I made a cup of green tea (in the Keurig, but old-fashioning steeping will work just as well). I poured the green tea, some almond milk, and a little stevia in a blender bottle—Shake, shake, shake—pour into a cup and enjoy the frothy goodness!
 (note to self: remove chipped purple nail polish, stat!)

Any tips for how to lighten up on the OCD? Ultimately, my goal is live more "in-the-moment" and enjoy what I am doing rather than constantly thinking of what I need to do next! Especially when I am spending time with my son--he deserves my full focus and attention, not only the part of my brain that isn't focused on my to-do list!
