The good stuff is quickly making an appearance back in to my daily life. When I say the good stuff, I’m talking about veggies, of course.
I have been incorporating them into breakfasts with open-faced egg sandwiches.
Spinach, tomatoes, and peppers all before 9 AM? I call that a great way to start the day.
P.S. If you like sweet and savory combinations, then you must try this.

Top 2 slices of toast (sandwich thin for me) with 1 laughing cow Swiss cheese + cranberry apple butter or honey apple butter. Then top with eggs (cooked however you like them).
I sautéed the peppers, tomatoes, and spinach in a little bit of extra virgin olive oil. Then I simply push the veggies aside and cook the eggs. One pan. One spatula. Done.
I could eat this every day. It’s simple, healthy, and delicious.
So back to the veggies. I’ve also been getting my rainbow in with veggie bowls.
This particular bowl had herb mélange mix topped with roasted yellow peppers, butternut squash, cabbage, tomatoes, avocado, and hummus.
Now, I prefer to eat these for lunch or dinner but they have made appearances in the breakfast rotation a few times. Hey, desperate times call for desperate measures.
I even made an effort to eat my greens while dining out in downtown Chicago.
While I truly enjoyed the Russian Tea Room, I have to admit that this salad was a bit disappointing. The menu promised goat cheese, candied walnuts, and cucumbers. The goat cheese was actually feta and the walnuts were no where to be found. You win some, you lose some.
The Russian tea, however, was spot on. It was somehow strong, yet light at the same time.
We had an amazing waiter who made certain that our glasses were always at least half full. Maybe he was trying to keep us optimistic or maybe he was gunning for a nice tip. Either way, he kept us all highly caffeinated and he earned his tip, for sure.
As all highly caffeinated individuals should, we shopped downtown and made our way to the Bean after lunch.
Touristy.
Interestingly, of all the times I have been to the Bean, I’ve never taken a photo. So this photo was very necessary. It just so happens that the lights were perfect and my iPhone came through for a nice, albeit touristy, shot.
Ah, I just love the city in the evening.
Despite our late [and leisurely lunch], we worked up an appetite while walking around. Since we planned on doing some shopping at Trader Joe’s and Whole Foods in Lincoln Park, we stopped by Goose Island Brewery for a few appetizers.
One of the very best hummus platters. Oh, and I spy more veggies!
And VEGGIE chili – I won’t say it because I think you get the point, right? Definitely hit the spot.
I’ve been pretty dedicated to getting back to my usual way of eating after the holidays and so far, I’m very satisfied with the way things are going.
As long as I keep it up, I should be back to my usual, energized self in no time.
