Healthy Breakfast Ideas [and a tasty omelet]

Breakfast is one of my favorite meals. It also happens to be one of the most important meals of the day.

For me, my morning meal sets the tone for the day. If I begin the day with something healthy and filling, chances are good that I’ll continue that trend for the remainder of the day.

In fact, breakfast (and coffee) are actually my motivators to get my booty up and out of bed! My phone alarm may or may not be titled wake UP, it’s time to the break the fast! Yes, I am a loser. I know this.

During the week, I have a few go-to breakfasts that are relatively quick and easy. And most importantly, they are healthy!

Oatmeal with fruit and almond butter. Prepare the oats the night before and then warm and top in the morning for a quick meal.

Mini veggie frittatas with vegetarian sausage. I make these over the weekend and then freeze them for the week ahead. Pop a couple in the microwave or toaster and you’re good to go!

Black bean and egg on a toasted English muffin. I usually make these when I have leftover black beans from dinner. Toast an English muffin and then top with hummus, beans, and a microwave egg puff. Grab and go!

Chia pudding (2 T. chia soaked overnight in 1.5 C. almond milk) topped with extra almond milk, blueberries, and cinnamon. This is also great with cut up peaches, banana, or strawberries. Actually, any fruit would work!

Some weeks, I prepare a big jar of chia pudding for easy breakfasts every day!

Open-faced fruit and almond butter sandwiches. Toast and top – doesn’t get much easier than that!

On the weekends, I get a bit more creative and I usually make something that I wouldn’t have time to make during the week.

Blueberry oatmeal pecan bake. This requires an oven and that’s not in my vocabulary during weekday mornings.

Love Grown Granola oat cake with easy Greek yogurt sauce.

And most recently, I made THIS.

2 egg + egg white omelet filled with roasted sweet potato, arugula, and feta. Plus, a side of toast and strawberry jelly.

This was fantastic! Eggs, sweet potatoes, and feta are a perfect match. Next time, I think I’ll add some pesto as well!
