Popping in for a quick middle of the day post while I munch my lunch. Okay, devour my lunch, but you get the idea.
Workout:
Biked to my parents (1 mile)
Walked the pupperoni (1 mile)
Jog (2 miles)
Bike back home (1 mile)
Whew, I’m tired just typing that. ;) My jog was more like an alternating walk/jog because I didn’t have much energy today for some reason! It was sooo windy (we actually have a wind advisory), so talk about resistance!
Here’s my pup—she gets so excited to go on a walk that she literally smashes herself up against the door until I'm ready to go! For future reference, I call her “pretty woman.” (in a weird voice, lol!)

Right when I walked in my door, I microwaved some frozen broccoli and then roasted it on a mistoed pan at 425 degrees for about 15 minutes.
While the broccoli roasted up, I chopped up a huge bowl of veg. Earthbound Farm Organic baby carrots, 2 roma tomatoes, and some peas leftover from the other night.

I mixed all the veggies (including broccoli) up with some Sabra Roasted Pine Nut Hummus, Whole Food Black Bean n’ Corn Salsa, and nutritional yeast. Then I chopped up a Morningstar Farms Spicy Black Bean Burger and threw it on top.
Finish it off with a little spiciness, Sriracha, and my favorite chips: Garden of Eatin’ Multigrain Everything.
And there you have it: a delicious & nutritious veggie bowl. Or a salad minus the lettuce.
Eaten like this, of course:
I’m off to shower my stinky self—I was too hungry to shower before eating! And then go pick up my son from school.

Do you prefer your “salad” with or without lettuce? I like both; it just depends on my mood and what’s in my fridge!
